Strawberry & Banana Overnight Oats


Okay I'm probably super late to the overnight oats trend so bare with me here. But GUYS... I have been consistently bringing oatmeal packets with me to work for lunch as long as I can remember. They're so freaking easy to grab and go, along with a piece of fruit and BAM instant healthy lunch.


One intention of mine for 2019 was to take better care of my body. For me, that didn't mean losing a ton of weight or becoming ultra-fit but just truly taking care of myself. And I have to be honest, I haven't been doing the best job.


We've been eating out a lot, I'd been skipping lots of my workouts, forgetting to take my daily vitamins and (not surprisingly) I had been feeling like absolute crap. In the last two weeks, I've made the effort to get back on track and to start taking care of myself again. I'm nowhere near being this super healthy individual with all of the wisdom in the world. But I am feeling more like myself again.


But back to oats.


These babies are seriously so delicious and just as easy as packing an oatmeal packet for lunch. I don't know how I didn't get on this trend earlier?! Maybe it's because "Overnight Oats" just sounds intimidating? But forreal, you just throw a bunch of stuff in a mason jar and put it in the fridge. Voila! Fancy oats that all of your coworkers will be impressed by!

Strawberry & Banana Overnight Oats

Ingredients

  • ½ cup old-fashioned oats (pick up GF oats to make this Gluten Free!)

  • ½ cup milk (whichever type you prefer)

  • ½ teaspoon pure maple syrup

  • ¼ teaspoon pure vanilla extract

  • Half a Banana, cut up

  • 4-5 Strawberries, cut up

  1. Combine all ingredients (except fruit) in a mason jar. Seal with a lid and shake to mix. (I mixed mine up in a mixing bowl and then poured into the jar for less mess)

  2. Refrigerate at least 6 hours and up to 3 days. Top with strawberries and bananas when ready to eat!
