My Favorite Gluten Free Cookie
Being gluten free can be seriously SO HARD. When everything you used to love you can't eat anymore, it makes for some impossible cravings.
Four years ago, I was having serious headaches and after much trial and error I discovered it was a gluten intolerance. I'll save that whole long story for another time. But ever since then I've had difficulty trying to find a good gluten free cookie recipe. I've scoured Pinterest trying recipe after recipe and none ever satisfying my cookie cravings. Some came out too flat, some too hard (i.e. bark-like) and some just plain disgusting.
My mom (also gluten intolerant!) shared this recipe with me awhile ago and I finally got to try it out this past weekend! Let me tell you. I found the BEST gluten free cookie recipe. It's titled as a "Gluten Free Chocolate Chip Cookie" but I think of it more as a Gluten Free Peanut Butter Banana Chocolate Chip Cookie. Check out the recipe below and let me know if you try it out!
1 medium banana
1 c. peanut butter (I used crunchy for a little extra kick!)
1 tsp. vanilla
1/2 tsp. baking soda
1/2 c. sugar
1/4 tsp. salt
1 1/2 c. semisweet chocolate chips
Preheat oven to 350 degrees F.
Mash banana in a large mixing bowl. Add peanut butter, egg, vanilla, baking soda, sugar and salt, stirring to combine. Fold in chocolate chips.
Drop heaping spoonfuls of dough on a parchment-lined baking sheet, placing cookies about 1 1/2” apart.
Bake for 9-10 minutes, or until cookies are lightly golden.
